Banana Loaf

Ingredients

  • 1/2 cup butter Softened, unsalted
  • 1/2 cup SugarLike 0 Calorie Sweetener
  • 2 ea eggs
  • 1/2 tbsp vanilla extract
  • 2 ea bananas ripen
  • 1 2/3 cup all purpose flour
  • 1 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tbsp coconut milk
  • 1/3 cup pecan chopped
  • 1/4 cup chocolate chopped

Instructions

  1. Preheat the oven to 325°F (163°C). Lightly grease the 4 x 6 inch loaf pan.
  2. In a medium-size bowl, soften butter. Slowly add SugarLike™ Zero Calorie Sweetener and mix on low-to-medium speed until combined.
  3. In a small mixing bowl, whisk together eggs, water and vanilla extract until smooth. Then combine with mashed bananas.
  4. In a large-size bowl, mix and sift all-purpose flour, baking soda and salt.
  5. Add the flour mixture to the butter mixture. Mix on low-to-medium speed until combined.
  6. Add in the egg mixture, pecans and chopped chocolates. Gently mix until moistened.
  7. Pour the batter into the loaf pan.
  8. Bake for 45 minutes or until a toothpick comes out clean.
  9. Remove it from the oven and leave on a cooling rack before serving.
