Ingredients

  • 2 cups all purpose flour whole wheat flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp matcha powder
  • 1/2 cup butter unsalted
  • 1 cup SugarLike 0 Calorie Sweetener
  • 2 ea large eggs
  • 1 c milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C). Line up paper cases in a muffin tin.
  2. In a medium-size bowl, cream butter. Slowly add SugarLike™ Zero Calorie Sweetener and mix on low speed until combined.
  3. In a large-size bowl, mix all-purpose flour, baking powder, salt and matcha powder together and sift.

  4. Add the butter mixture to the flour mixture. Mix on low speed until combined.
  5. In a small mixing bowl, whisk together eggs, milk and vanilla extract until smooth.
  6. Make a well in the center of the dry ingredients and pour the egg mixture in. Gently mix until moistened.
  7. Fill the paper cases just 2/3 full.
  8. Bake for 20 minutes or until a toothpick comes out clean.
  9. Remove them from the oven and leave them on a cooling rack before serving.

Recipe Notes

This healthy yummy muffin is a good source of iron. It has achieved 95% sugar reduction withno added sugar at all and much lower calories than the traditional one.

You could also spread some red bean paste on top of the muffin to make an authentic Japanese flavour combination

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup SugarLike 0 Calorie Sweetener
  • 1/2 cup butter unsalted
  • 2 tsp baking powder
  • 2 ea eggs
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 1/2 cup frozen blueberries

Instructions

  1. Preheat the oven to 375 °F (190°C). Line a muffin tin with paper cases

  2. In the bowl of an electric mixer fitted with a flat beater attachment, cream butter first, and then add SugarLike™ Zero Calorie Sweetener in on low speed. Beat until light and fluffy.

  3. Slightly chop frozen blueberries. Add the eggs (at room temperature) one at a time. Mix until just combined. Gradually stir in milk.
  4. In another bowl, sift together the flour, baking powder and salt. Make a well in center of dry ingredients; pour in liquid and stir just until moistened. Gently fold in blueberries.
  5. Spoon into prepared muffin cups, filling to top. Bake in the middle of the preheated oven for 22 minutes or until a toothpick comes out clean.

  6. Remove from oven and place on a wire rack to cool for 15 minutes before serving.
