Ingredients

  • 1/2 cup butter Softened, unsalted
  • 1 cup SugarLike 0 Calorie Sweetener
  • 2 cup cake&pastry flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp almond powder
  • 2 ea eggs
  • 1 cup coconut milk

Instructions

  1. Preheat the oven to 400°F (204°C). Line up paper cases in a cupcake tin.
  2. In a medium-size bowl, cream butter. Slowly add SugarLike™ Zero Calorie Sweetener and mix on low-to-medium speed until combined.
  3. In a large-size bowl, mix flour, baking powder, salt and almond powder together and sift.
  4. Add the butter mixture to the flour mixture. Mix on low-to-medium speed until combined.
  5. In a small mixing bowl, whisk together eggs, coconut milk until smooth.
  6. Make a well in the center of the dry ingredients and pour the egg mixture in. Gently mix until moistened.
  7. Fill the paper cases just 2/3 full.
  8. Bake for 14 minutes or until a toothpick comes out clean.
  9. Remove them from the oven and leave them on a cooling rack before serving.
