Almond Coconut Cupcakes
Healthy sugar-free cupcakes for a relaxing afternoon
1/2 cup butter (Softened, unsalted)
1 cup SugarLike 0 Calorie Sweetener
2 cup cake&pastry flour
3 tsp baking powder
1/4 tsp salt
2 tbsp almond powder
2 ea eggs
1 cup coconut milk
Preheat the oven to 400°F (204°C). Line up paper cases in a cupcake tin.
In a medium-size bowl, cream butter. Slowly add SugarLike™ Zero Calorie Sweetener and mix on low-to-medium speed until combined.
In a large-size bowl, mix flour, baking powder, salt and almond powder together and sift.
Add the butter mixture to the flour mixture. Mix on low-to-medium speed until combined.
In a small mixing bowl, whisk together eggs, coconut milk until smooth.
Make a well in the center of the dry ingredients and pour the egg mixture in. Gently mix until moistened.
Fill the paper cases just 2/3 full.
Bake for 14 minutes or until a toothpick comes out clean.
Remove them from the oven and leave them on a cooling rack before serving.
This recipe has achieved 95% sugar reduction, with no added sugars!
You may decorate the cupcakes with coconut chips and mint leaves
