Whole Wheat Pancakes

Healthy sugar-free pancakes for a guilt free weekend brunch

  • 1 cup Whole Wheat Flour
  • 1 tbsp olive oil (extra virgin)
  • 8 tbsp SugarLike 0 Calorie Sweetener
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla
  • 1 pinch salt
  • 3 ea eggs (large)
  • 1 cup milk (2% for added richness)
  1. Whisk dry ingredients in a large mixing bowl.
  2. Pour olive oil into measuring cup. Add vanilla extract and milk. Blend into mixing bowl while stirring.
  3. Add eggs and beat until batter is smooth.
  4. Heat skillet or frying pan to medium heat. Pour half a cup batter onto center of heated frying pan. Tilt to allow batter to flow across the whole pan.
  5. Cook for 2 minutes, or until edge of pancake gets brown. Flip over with a spatula. Cook bottom for 15 seconds.
  6. Remove to serving plate and repeat for the rest of the batter
This healthy pancake is saturated fat and trans fats free, which may reduce the risk of heart diseases. It also has achieved 85% sugar reduction with no added sugars.
